Kale Salad with Almonds

This is a healthy and simple salad recipe that is sweet and tangy!! Easy to make and can be made ahead. 

Step by Step recipe:

1. Wash and dry Kale. Chop Kale as finely as you can.

2. Cut Grape tomatoes into halves and toss them in the chopped kale.

3. In a small bowl, whisk together extra virgin olive oil, honey, lime juice, salt and pepper

4. Pour the salad dressing on the salad and mix it well.

5. Add the shredded Parmesan and sliced almonds to the salad.

6. Mix it well and top with dried cranberries.

Kale Salad with Almonds recipe

Prep time: 10 mins  Cooking time:0 mins    Total time: 10 mins

Ingredients:

3 cups of finely chopped kale
1/2 cup grape tomatoes
1/2 cup sliced almonds
1/4 cup shredded Parmesan
1/8  cup dried cranberries
2 tbsp extra virgin olive oil
2 tbsp honey
2 tbsp lemon juice
salt and pepper to taste

Directions:

  1. Mix chopped kale and grape tomatoes.
  2. In a small bowl, whisk together extra virgin olive oil, honey, lime juice, salt and pepper.
  3. Add the shredded Parmesan and sliced almonds to the salad.
  4. Mix it well and top with dried cranberries.
